Step 1: Prepare ingredients: Need to prepare a fresh black chicken (black chicken) about 0.3 - 0.4kg, 10-15 strands of fresh or dried Cordyceps, fresh Cordyceps will have a more refreshing taste, a small Korean ginseng root of 30 roots/kg. Shiitake mushrooms will also be soaked in salt water for about 5 minutes to clean, lotus seeds if using dried lotus seeds, pay attention to soak in warm water for 1 hour before to soften. Wash the ginseng and use a clean toothbrush to scrub the gaps between the roots and tubers to remove dirt. As for Cordyceps, you can use it immediately after taking it out of the box, do not wash it with water.

 

Step 3: Put the black chicken in the pot with 1-2 cloves of onion and ginger that have been roasted until fragrant. Then add the broth, bring to a boil and skim off the foam to make the broth clear. Continue to add ginseng, hen seeds, shiitake mushrooms and red apples to the pot. Reduce the heat and simmer for 2 to 3 hours until the chicken is tender and the spices are absorbed, add Cordyceps mushrooms and cook for 30 minutes then turn off the stove.
